Ingredients

  • 2 cups fresh spinach
  • 6 whole large eggs
  • ½ cup feta cheese, crumbled
  • 3 tbsp green onions, chopped
  • 1 tbsp butter
  • 1 cup lettuce, chopped (for serving)

Instructions

    Whisk eggs with a pinch of salt and pepper in a bowl until slightly frothy, about 30 seconds.

    Heat butter in a 10-inch nonstick skillet over medium heat until it foams, about 60 seconds.

    Add spinach and cook, stirring, until wilted and any liquid has evaporated, 2 minutes.

    Pour in the egg mixture and scatter feta and green onions on top. Let it cook undisturbed for 3 minutes.

    Once edges are set but center still jiggles slightly, slide onto a plate and fold in half.
