Ingredients

  • 1 lb beef sirloin, cut into 1-inch cubes
  • 3 tbsp shallots, minced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 4 oz long beans, halved and blanched
  • 2 whole eggs

Instructions

    Mix beef with shallots, garlic, ginger, soy sauce, and lime juice. Let sit 10 minutes.

    Thread beef onto skewers, pressing gently. Heat a cast iron skillet over medium-high until smoking.

    Sear skewers 3-4 minutes per side without moving—exterior should char and darken.

    Transfer sate to a plate. Add long beans to the same skillet, toss quickly until heated through, ~1 minute.

    Crack eggs into the skillet. Cook sunny-side up until whites set but yolks jiggle, ~3 minutes.
