Ingredients

  • 1 lb beef sirloin or ribeye, thinly sliced (about 1/8 inch)
  • ½ cup coconut milk (canned, full-fat)
  • 1.5 tbsp ginger, minced
  • 1 tbsp galangal or extra ginger (optional but traditional)
  • 2 tbsp shallots, minced
  • 1 tbsp palm sugar or brown sugar

Instructions

    Combine coconut milk, ginger, galangal, shallots, palm sugar, salt, and pepper in a bowl.

    Toss beef slices into the marinade, coating evenly. Let sit 2 minutes.

    Heat oil in a large skillet over high heat until smoking, about 1 minute.

    Working in batches, add beef slices in a single layer and sear without stirring for 90 seconds.

    Flip each piece and sear the other side 60 seconds until edges are caramelized and centers still pink.

    Transfer to a plate. Serve hot with lime wedges and sambal if you have it.
