Ingredients
- 1 lb beef sirloin or ribeye, thinly sliced (about 1/8 inch)
- ½ cup coconut milk (canned, full-fat)
- 1.5 tbsp ginger, minced
- 1 tbsp galangal or extra ginger (optional but traditional)
- 2 tbsp shallots, minced
- 1 tbsp palm sugar or brown sugar

Combine coconut milk, ginger, galangal, shallots, palm sugar, salt, and pepper in a bowl.

Toss beef slices into the marinade, coating evenly. Let sit 2 minutes.
