Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 1 whole lemon (juiced)
  • 1.5 tsp ground cumin
  • 1 tsp paprika
  • 3 whole garlic cloves, minced

Instructions

    Cut chicken thighs into 1.5-inch cubes. Thread onto metal skewers, leaving small gaps between pieces.

    Whisk together olive oil, lemon juice, cumin, paprika, garlic, salt, and pepper in a small bowl.

    Brush marinade all over the skewers, turning to coat evenly. Let sit 5 minutes.

    Heat a grill pan or cast-iron skillet over medium-high until smoking, about 2 minutes.

    Lay skewers on the hot pan and sear without moving for 3 minutes until edges char and caramelize.

    Rotate skewers 90 degrees, sear another 3 minutes. Flip and repeat on both sides until chicken is cooked through, ~9 minutes total.
