Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 cups cooked rice
- 1 medium carrot, julienned
- 1 small eggplant, cubed
- 1 medium onion, sliced
- 3 tbsp soy sauce

Heat 1 tbsp vegetable oil in a large skillet over high heat. Add the 1 lb beef slices in a single layer and cook until browned, about 3-4 minutes. Remove and set aside.

In the same skillet, add 1 tbsp oil, then the 1 sliced onion, 1 julienned carrot, and 1 cubed eggplant. Stir-fry until vegetables are tender-crisp, about 5-6 minutes.

Return the beef to the skillet. Add 3 tbsp soy sauce and stir everything together, cooking for 1-2 minutes until the sauce coats the beef and vegetables.
