Basque-style Cod

Ingredients

  • 4 fillets (about 6 oz each) cod fillets
  • 3 tbsp olive oil
  • 1 medium, thinly sliced onion
  • 3 cloves, minced garlic
  • 1.5 cups frozen peas
  • ½ cup dry white wine
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Pat the 4 cod fillets dry and season both sides with the 1 tsp salt and 0.5 tsp black pepper. Set aside while you start the sauce.

    Heat the 3 tbsp olive oil in a large skillet over medium heat. Add the 1 sliced onion and cook, stirring, until soft and golden, about 8 minutes.

    Add the 3 minced garlic cloves and cook until fragrant, about 1 minute, stirring constantly so it doesn't burn.

    Pour in the 0.5 cup white wine and bring to a simmer, scraping up any browned bits. Let it bubble until reduced by half, about 3 minutes.

    Add the 1.5 cups frozen peas and 0.5 cup water. Stir and bring back to a gentle simmer.

    Nestle the cod fillets into the sauce, skin-side down if they have skin. Spoon some sauce over the top. Cover and simmer gently until the fish is opaque and flakes easily, about 8-10 minutes.

    Taste the sauce and adjust seasoning with extra salt or pepper if needed. Serve the cod with the peas and sauce spooned over the top.
