Ingredients

  • 4 filets cod fillets
  • ½ cup olive oil
  • 6 cloves garlic
  • ¼ cup parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. 1

Pat the 4 cod fillets dry and season both sides with the 1 tsp salt and 1/2 tsp black pepper.

  2. 2

Heat the 1/2 cup olive oil in a large skillet over medium heat. Add the 6 garlic cloves, thinly sliced, and cook until fragrant and lightly golden, about 2 minutes.

  3. 3

Remove the garlic with a slotted spoon and set aside. Increase heat to medium-high and place the cod fillets in the oil, skin-side up.

  4. 4

Cook the cod until the bottom is golden and the fish flakes easily, about 4-5 minutes per side. Use a spatula to gently flip.

  5. 5

Return the garlic to the pan and spoon the hot oil over the fish for 1 minute.

  6. 6

Transfer the cod to plates, pour the garlic oil over the top, and sprinkle with the 1/4 cup chopped parsley. Serve immediately.
