Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 red chili pepper, thinly sliced
- 2 tbsp chives, chopped
- 2 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- 1
Pat the 1 lb shrimp dry with paper towels and season with 0.5 tsp salt and 0.25 tsp black pepper.
- 2
Melt 2 tbsp butter in a large skillet over medium-high heat. Add the shrimp in a single layer and cook until pink and opaque, about 2 minutes per side. Transfer to a plate.
- 3
Reduce heat to medium. Add 4 minced garlic cloves and 1 sliced red chili pepper to the skillet. Cook until fragrant, about 1 minute.
- 4
Pour in 1 cup heavy cream. Bring to a simmer, scraping up any browned bits. Cook until slightly thickened, about 3 minutes.
- 5
Return the shrimp to the skillet. Simmer for 2 minutes, until the shrimp are heated through and the sauce coats the back of a spoon.
- 6
Stir in 2 tbsp chopped chives. Serve immediately, garnished with extra chives or chili if desired.
- 7
Optional: add a pinch of smoked paprika or a squeeze of lemon juice for extra depth.
