Ingredients

  • 4 oz unsalted butter
  • ¼ cup heavy cream
  • ½ cup brown sugar
  • ¾ tsp sea salt
  • 8 oz dark chocolate (60–70%), chopped
  • 2 tbsp cocoa powder or chocolate sprinkles for coating
  • ½ tsp vanilla extract

    Combine butter, brown sugar, and cream in a small saucepan over medium heat.

    Stir constantly until mixture bubbles and deepens in color, about 4–5 minutes.

    Remove from heat. Stir in salt and vanilla. Pour onto a parchment-lined plate.

    Freeze until firm, at least 20 minutes, or overnight for easier handling.

    Melt chocolate in a microwave-safe bowl in 30-second bursts, stirring between each.

    Scoop or cut caramel into 24 small pieces. Roll each between your palms into a ball.

    Dip each caramel ball into melted chocolate using a fork, letting excess drip off.

    Place on parchment. Dust with cocoa powder or sprinkles while chocolate is still wet.

    Refrigerate until set, 10 minutes, before serving. Store in an airtight container.
