Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 3 stalks scallions, cut into 2-inch pieces
  • 2 tbsp neutral oil
  • 1 tsp salt
  • ½ tsp black pepper, freshly ground

Instructions

    Pat shrimp dry with paper towels. Season with salt and pepper on both sides.

    Heat oil in a large skillet over medium-high until shimmering, about 1 minute.

    Add shrimp in a single layer and cook 90 seconds without moving until bottoms turn pink.

    Flip and cook another 90 seconds until opaque throughout.

    Push shrimp to the side, add garlic, and cook for 30 seconds until fragrant.

    Toss everything together, scatter scallions on top, and serve hot immediately.
