Ingredients
- 4 oz chow mein noodles or crispy chow mein noodles
- 6 oz shrimp, peeled and deveined
- 6 oz pork shoulder or ground pork
- 2 tbsp fish sauce
- 1 whole lime (juiced)
- ½ cup fresh cilantro and mint, chopped
- 1 whole scallion, sliced thin

If using fresh chow mein noodles, boil in salted water until just tender, ~3 minutes. Drain well and pat dry.

Heat 2 tbsp neutral oil in a large skillet over medium-high until shimmering, ~90 seconds.

Add noodles and sear without stirring for 2 minutes until a golden crust forms on the bottom.

Toss noodles and push to the side. Add shrimp and pork to the cleared space; cook, stirring, until shrimp turns pink and pork is no longer pink, ~4 minutes.

Add fish sauce and lime juice to the pan. Toss everything together for 30 seconds until coated.

Transfer to a serving dish. Top with cilantro, mint, and scallion. Serve immediately.
