Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 stalks lemongrass, white part only, minced
  • 2 tbsp fish sauce
  • 1 whole lime (juiced)
  • 2 cups fried rice vermicelli (crispy noodles)
  • 1.5 tbsp sriracha or chili paste

Instructions

    Pat shrimp dry with paper towels. Toss with minced lemongrass, fish sauce, and a pinch of salt.

    Heat 1 tbsp oil in a large skillet over high heat until it shimmers, about 90 seconds.

    Add shrimp in a single layer. Cook 90 seconds without moving until edges char, then flip and cook another 90 seconds until just cooked through.

    Squeeze lime juice over the shrimp and toss to coat. Remove from heat.

    Divide crispy vermicelli between two bowls or plates. Top with shrimp and pan juices.

    Mix sriracha with 2 tbsp lime juice and 1 tbsp water to make a quick dipping sauce. Serve alongside.
