Ingredients
- 12 oz sai oua (northern Thai pork herb sausage)
- ½ cup nam prik num (green chili paste)
- ½ cup nam prik ong (red tomato-chili paste)
- 2 oz pork rinds (chicharrones)
- 8 oz long beans, cut into 3-inch pieces
- 4 oz cabbage, chopped
- 1 whole cucumber, sliced into spears
- 1 tbsp neutral oil

Heat oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Add sai oua and cook without moving for 3 minutes until the bottom browns deeply.

Roll the sausage and cook the new side for 2 minutes, then continue rolling every 90 seconds until cooked through, ~8 minutes total.

Push sausage to the side, add long beans and cabbage, then toss with the rendered fat for 3 minutes until beans blister.
