Quick Costela no Bafo with Grilled Sausages

Caramelized pork ribs and sausages finished in a tangy lime-beer glaze, ready in under 30 minutes. This is the weeknight shortcut to the Brazilian classic — high heat instead of a slow braise, same sticky-sweet finish.

Ingredients

  • 2 lbs pork ribs (baby back or short ribs), cut into individual bones
  • 4 links grilled sausages (Brazilian linguiça or chorizo)
  • 1 whole lime (juiced)
  • ½ cup beer (light lager)
  • 4 cloves garlic, minced
  • 2 tbsp brown sugar
  • 2 tbsp worcestershire sauce
  • 1 tsp smoked paprika

Instructions

  1. 1

Pat ribs dry. Season generously with salt and pepper on both sides.

  2. 2

Heat oil in a large skillet over medium-high until shimmering, ~90 seconds.

  3. 3

Working in batches, sear ribs 2–3 minutes per side until caramelized and browned. Transfer to a plate.

  4. 4

Add garlic to the skillet, stir for 30 seconds until fragrant, then pour in lime juice, beer, brown sugar, worcestershire, and paprika.

  5. 5

Return ribs to the skillet and nestle sausages among them. Simmer uncovered for 8–10 minutes until sauce thickens and ribs are tender.

  6. 6

Serve hot with the pan sauce spooned over top.
