Quick Chicken Roti with Cilantro Salad

Ingredients

  • ¾ lb boneless, skinless chicken breast
  • 1 medium yellow onion
  • 2 wraps store-bought roti wraps
  • 1 cup, chopped fresh cilantro
  • 1 whole lime
  • 1.5 tbsp curry powder
  • 2 whole, sliced scallions

Instructions

    Cut chicken into bite-sized pieces. Slice onion into thin half-moons.

    Heat oil in a large skillet over medium-high. Add onion and cook until soft and translucent, about 4 minutes.

    Add chicken and curry powder. Cook, stirring frequently, until chicken is cooked through, 6–7 minutes.

    Squeeze lime juice over the chicken. Toss in half the scallions and remove from heat.

    Toss cilantro with remaining scallions and a pinch of salt.

    Warm roti wraps in a dry skillet 30 seconds per side until soft. Fill with chicken and top with cilantro salad. Serve immediately.
