Ingredients
- ¾ lb boneless, skinless chicken breast
- 1 medium yellow onion
- 2 wraps store-bought roti wraps
- 1 cup, chopped fresh cilantro
- 1 whole lime
- 1.5 tbsp curry powder
- 2 whole, sliced scallions

Cut chicken into bite-sized pieces. Slice onion into thin half-moons.

Heat oil in a large skillet over medium-high. Add onion and cook until soft and translucent, about 4 minutes.

Add chicken and curry powder. Cook, stirring frequently, until chicken is cooked through, 6–7 minutes.

Squeeze lime juice over the chicken. Toss in half the scallions and remove from heat.
