Ingredients
- ¾ lb boneless, skinless chicken breast
- 6 oz lo mein noodles or spaghetti
- 3 tbsp soy sauce
- 3 clove garlic cloves
- 1 medium bell pepper (red or yellow)
- 1 tbsp sesame oil

Place the chicken breast on a cutting board and slice it lengthwise into two thin, flat pieces, then slice those pieces crosswise into bite-sized strips about the size of your pinky finger.

Mince the garlic cloves until the pieces are smaller than a grain of rice — about the size of pencil-tip dots.

Cut the bell pepper in half lengthwise from tip to tip, remove the white core and seeds, then slice each half crosswise into thin strips about 1/4-inch wide.

Bring a large pot of salted water to a rolling boil, add the noodles, and cook according to the package instructions until just tender, then drain in a colander and set aside.

While the noodles cook, heat 2 tablespoons of neutral oil in a 12-inch skillet over medium-high heat until it shimmers and slides quickly when you tilt the pan, about 90 seconds.

Add the chicken strips to the hot oil and cook, stirring once every 30 seconds, until all pieces are no longer pink inside and the edges are light golden, about 5–6 minutes.

Push the cooked chicken to one side of the skillet, add the minced garlic to the empty side, and stir constantly for 30 seconds until it becomes fragrant and light golden.
