Ingredients

  • ½ lb boneless, skinless chicken breast or thigh
  • 2 pack instant ramen noodles (2 packs, discard seasoning packet)
  • 3 tbsp gochujang (Korean red chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 clove garlic, minced
  • 2 stalk scallions, sliced (white + green parts separated)

Instructions

    Slice chicken thin (1/4-inch). Heat 1 tbsp oil in a large skillet over high heat until shimmering.

    Add chicken and white parts of scallions. Stir-fry until chicken is cooked through, ~5 minutes.

    Stir in gochujang, soy sauce, sesame oil, and garlic. Mix until paste coats chicken, ~30 seconds.

    Boil salted water in a pot. Cook noodles until al dente, ~2 minutes. Drain and add to skillet.

    Toss noodles with chicken and sauce until coated and hot, ~1 minute. Top with scallion greens.

    Divide between bowls and serve immediately while steaming hot.
