Ingredients

  • 2 whole sweet potatoes, medium
  • 1.5 cups pulled pork, store-bought or leftover
  • ¾ cup sharp cheddar, shredded
  • 2 tbsp hot honey or chili-honey drizzle
  • 2 tbsp scallions or green onions, sliced
  • 1 tbsp butter

Instructions

    Pierce each sweet potato 3–4 times with a fork. Microwave on high for 10 minutes, turning halfway, until very soft inside.

    Warm pulled pork in a skillet over medium heat, stirring occasionally, until heated through, about 3 minutes.

    Halve each sweet potato lengthwise. Fluff the insides with a fork and top each half with a pat of butter.

    Divide warm pulled pork between the four potato halves, piling it high in the center of each.

    Sprinkle cheddar over the pulled pork. Return to the microwave for 90 seconds until cheese melts.

    Drizzle with hot honey and scatter scallions on top. Serve immediately.
