Ingredients
- 2 whole sweet potatoes, medium
- 1.5 cups pulled pork, store-bought or leftover
- ¾ cup sharp cheddar, shredded
- 2 tbsp hot honey or chili-honey drizzle
- 2 tbsp scallions or green onions, sliced
- 1 tbsp butter

Pierce each sweet potato 3–4 times with a fork. Microwave on high for 10 minutes, turning halfway, until very soft inside.

Warm pulled pork in a skillet over medium heat, stirring occasionally, until heated through, about 3 minutes.

Halve each sweet potato lengthwise. Fluff the insides with a fork and top each half with a pat of butter.

Divide warm pulled pork between the four potato halves, piling it high in the center of each.
