Ingredients

  • 1 cup Greek yogurt, plain
  • 3 whole eggs
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • 1 tbsp honey
  • 1 tbsp butter, for the griddle

Instructions

    Combine yogurt, eggs, flour, baking powder, vanilla, and honey in a bowl.

    Stir until just combined—batter will be thick and slightly lumpy.

    Heat a skillet over medium-high. Melt butter until the surface shimmers, about 60 seconds.

    Pour batter into 4-inch circles (about 3 tbsp each). Leave space between them.

    Cook 2–3 minutes until edges look dry and bubbles form on the surface.

    Flip and cook the other side 1–2 minutes until light golden brown.
