Ingredients

  • 2 whole ripe bananas
  • ¾ cup rolled oats
  • 3 whole eggs
  • ½ tsp vanilla extract
  • 1 whole bananas, sliced
  • 1 cup strawberries, sliced

Instructions

  1. 1

Mash 2 ripe bananas in a bowl until no chunks remain. Add 3 eggs and vanilla, whisk until smooth.

  2. 2

Stir in 0.75 cup rolled oats. Let sit 1 minute so oats soften slightly. Salt and pepper to taste.

  3. 3

Heat a skillet or griddle over medium heat with a thin coating of butter. Wait 30 seconds until surface shimmers.

  4. 4

Pour batter into 3-inch rounds. Cook 2 minutes until bottom is golden, then flip and cook 90 seconds more.
