Ingredients

  • 2 medium ripe bananas
  • ¾ cup rolled oats
  • 2 large eggs
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • 1 tbsp butter

Instructions

    Mash bananas in a bowl until mostly smooth. Add oats, eggs, vanilla, and cinnamon; stir until combined.

    Heat butter in a nonstick skillet over medium-low heat until melted and foaming.

    Pour batter in 1/4-cup portions onto the skillet. Cook 2–3 minutes until edges look set and bottom is golden.

    Flip gently and cook another 1–2 minutes until golden and cooked through.

    Transfer to a plate. Serve warm with maple syrup, yogurt, or fresh berries.
