Ingredients

  • 8 slices prosciutto di Parma
  • 1 medium (about 2 lbs) cantaloupe or honeydew melon
  • 8 oz burrata cheese
  • 3 tbsp honey
  • ¼ tsp red pepper flakes
  • 8 leaves fresh basil
  • ½ whole (for juice) lemon

Instructions

    Heat a large skillet over medium-high heat. Lay prosciutto slices flat and cook until edges crisp, about 1 minute per side.

    Transfer crispy prosciutto to a plate. While it cools, halve the melon, scoop seeds, and slice into thin wedges.

    Combine honey and red pepper flakes in a small bowl. Warm gently in the microwave for 20 seconds until pourable.

    Tear prosciutto into bite-sized pieces. Arrange melon wedges on two plates, then scatter prosciutto and burrata over the top.
