Ingredients

  • 500 g potato dumplings
  • 300 g mixed vegetables (peas, carrots, onions)
  • 200 g garlic bread
  • 2 tbsp olive oil
  • 1 tsp dried red chilies
  • 2 tbsp fresh herbs (parsley or chives)

Instructions

  1. 1

Bring a large pot of salted water to a boil. Add the 500g potato dumplings and cook until they float and are heated through, about 10-12 minutes.

  2. 2

While dumplings cook, heat 2 tbsp olive oil in a large skillet over medium heat. Add the 300g mixed vegetables and 1 tsp dried red chilies; sauté until tender and lightly browned, about 8 minutes.

  3. 3

Toast the 200g garlic bread in a toaster or oven until golden and crisp, about 5 minutes.

  4. 4

Drain the dumplings and add them to the skillet with the vegetables. Gently toss to combine, then sprinkle with 2 tbsp fresh herbs before serving.
