- 250 g quark
- 2 tbsp chives
- 1 tsp salt
- ¼ tsp black pepper

Scrub the 500g potatoes and place in a pot with 1 tsp salt. Cover with cold water, bring to a boil, then simmer until fork-tender, about 20 minutes.

While potatoes cook, mix the 250g quark with 2 tbsp chopped chives, 1/4 tsp black pepper, and a pinch of salt in a bowl. Stir until smooth and creamy.
