Ingredients

  • 500 g potatoes
  • 250 g quark
  • 2 tbsp chives
  • 1 tsp salt
  • ¼ tsp black pepper

    Scrub the 500g potatoes and place in a pot with 1 tsp salt. Cover with cold water, bring to a boil, then simmer until fork-tender, about 20 minutes.

    While potatoes cook, mix the 250g quark with 2 tbsp chopped chives, 1/4 tsp black pepper, and a pinch of salt in a bowl. Stir until smooth and creamy.

    Drain the potatoes and let them steam dry for 2 minutes. Serve hot with the quark dip on the side.
