Ingredients

  • 1.5 lbs boneless chicken thighs
  • 8 oz chorizo or spicy smoked sausage
  • 1 lb small potatoes
  • 4 cups green cabbage, chopped
  • 6 cups chicken broth
  • 1 whole bay leaf
  • 1 tsp smoked paprika

Instructions

    Cut chicken into 2-inch chunks and slice sausage into 1/2-inch coins. Cut potatoes into 1-inch pieces.

    Heat olive oil in a large pot over medium-high heat until shimmering, about 90 seconds.

    Brown chicken and sausage together, stirring occasionally, until edges are golden, about 4 minutes.

    Add potatoes, broth, bay leaf, and paprika. Bring to a boil, then reduce heat and simmer 8 minutes.

    Stir in cabbage and cook until tender and potatoes are fork-soft, about 4 more minutes.
