Portuguese Bitoque—Steak, Egg & Fries

Ingredients
- 2 steaks (4 oz each) beef sirloin or ribeye steaks
- 1.5 cups frozen french fries
- 1 cup frozen mixed vegetables (carrots, peas, cauliflower)
- 2 large eggs
- ½ cup beef broth
- 3 tbsp butter

Heat 1 tbsp butter in a large skillet over medium-high until foaming, about 60 seconds.

Season steaks generously with salt and pepper. Sear 90 seconds per side without moving until deep brown. Transfer to a plate.

Add frozen fries and vegetables to the same skillet, season with salt and pepper, cook stirring often until vegetables are tender and fries start crisping, 6–8 minutes.

Push vegetables to the sides. Add beef broth and remaining 2 tbsp butter, scraping up any brown bits. Return steaks to the pan.

Make two wells in the vegetable mix and crack an egg into each. Cover and cook until whites set but yolks still jiggle, 3–4 minutes.

Serve hot with steaks topped by fried eggs and vegetables scooped around with all the pan gravy drizzled over.
