Ingredients
- ½ lb ground beef (80/20)
- ¼ lb ground pork
- 3 oz white cheddar, cut into small cubes
- ¼ cup yellow onion, finely minced
- 8 oz mushrooms, sliced
- 2 whole burger buns
- 2 whole eggs
- 1 portion fresh lettuce leaves and tomato slices

Mix ground beef, pork, salt, and pepper in a bowl until just combined—don't overwork.

Divide meat into 4 thin patties. Place cheese and minced onion on 2 patties, then top with the other 2 patties and press edges to seal completely.

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Sear patties 3 minutes per side without moving—you want a golden crust and cheese slightly visible at the edges.

Move patties to a plate. Add mushroom slices to the same skillet and cook 4 minutes, stirring occasionally, until golden and tender.
