Ingredients

  • 6 oz beef sirloin or round steak, 2 cutlets (about 6 oz total)
  • ½ cup all-purpose flour
  • 2 whole eggs
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp butter

Instructions

    Pound each steak thin between plastic wrap with a meat mallet until about 1/4 inch thick.

    Season with salt and pepper. Spread flour on a plate. Beat eggs in a shallow bowl. Coat each steak in flour, shake off excess, then dip in egg.

    Heat 1 tbsp butter and 1 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Sear both steaks 2 minutes per side without moving until golden brown and crispy. Transfer to a plate.

    Pour broth and Worcestershire into the pan. Scrape up browned bits. Simmer until reduced by half, about 2 minutes.

    Whisk in remaining 1 tbsp butter until glossy. Return steaks to the pan for 30 seconds to coat, then serve hot.
