Portuguese Bitoque with Crispy Fries & Fried Eggs

Ingredients
- 12 oz frozen french fries
- 2 steaks (about 5 oz each) beef sirloin or rib-eye steaks (1 inch thick)
- 3 tbsp butter
- 3 cloves garlic, minced
- 2 large eggs
- 1 tbsp fresh parsley, chopped

Start oven fries in a 400°F oven. They'll be golden in about 15 minutes.

Pat steaks dry with a paper towel and season generously with salt and black pepper on both sides.

Heat a 12-inch skillet over medium-high until smoking, ~90 seconds. Sear steaks 90 seconds per side without moving—aim for medium-rare. Transfer to a plate.

Lower heat to medium. Add 1 tbsp butter and minced garlic to the skillet, stirring, until fragrant but not brown—30 seconds max.

Return steaks to the skillet and turn in the garlic butter to coat. Transfer to a warm plate and tent with foil.

Add remaining 2 tbsp butter to the skillet. Crack both eggs into the pan and fry until whites are set but yolks still jiggle, 3–4 minutes.

Plate steaks, slide an egg alongside, add fries. Drizzle with pan butter and top steaks with parsley. Serve hot.
