Ingredients

  • 1.5 lbs beef short ribs (cut thin, about 1/2-inch thick)
  • 6 cloves garlic, minced
  • 3 tbsp butter
  • 8 oz frozen french fries
  • 1.5 cups cooked white rice
  • 1 cup mixed roasted vegetables (carrots, potatoes, zucchini)
  • 1 whole lime

Instructions

    Start fries in a 12-inch skillet over medium-high heat, following package directions. Transfer to a plate when golden.

    Pat ribs dry and season generously with salt and pepper on both sides.

    Add butter to the same skillet over medium-high heat. Once foaming, add minced garlic and cook until fragrant, about 30 seconds.

    Lay ribs in the skillet in a single layer. Sear without moving for 2 minutes until golden, then flip and sear the other side 2 minutes.

    Warm rice and roasted vegetables in a separate pot or microwave while ribs finish cooking.

    Plate ribs with fries, rice, and vegetables. Squeeze lime over everything and serve hot.
