Ingredients

  • 1.5 lb pork ribs (pre-cooked or pressure-cooked), cut into 2-inch pieces
  • 1 lb potatoes, cut into 1-inch cubes
  • 1 medium red onion, cut into 1-inch wedges
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 3 tbsp red wine vinegar

Instructions

    Toss potatoes and onions with oil, salt, and pepper on a sheet pan. Roast at 425°F while you cook the ribs.

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add minced garlic and cook for 30 seconds until fragrant, stirring constantly.

    Stir in tomato paste and vinegar, cooking for 1 minute until it becomes a glaze.

    Add pork ribs and toss to coat, cooking for 3–4 minutes until heated through and edges char.
