Ingredients

  • 1.5 lbs pork ribs (1.5 to 2 inches thick, bone-in)
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • ¾ cup beef broth
  • 1 medium tomato, diced
  • ½ medium red onion, thinly sliced
  • 1 lb frozen french fries
  • ½ cup farofa (toasted cassava flour)

Instructions

    Season ribs generously with salt and pepper on both sides.

    Heat oil in a large skillet over medium-high until shimmering, ~90 seconds.

    Sear ribs 3–4 minutes per side without moving until browned edges form.

    Pour broth over ribs, reduce to medium-low, cover, and braise 10 minutes until tender.

    Uncover, push ribs to the side, add minced garlic and butter to the pan, stir until fragrant, 30 seconds.

    Toss tomato and onion with salt, vinegar, and a pinch of pepper in a bowl.

    Cook fries in a separate skillet or oven per package until golden and crispy.
