Ingredients
- 2 lbs pork leg (skin-on, cut into 2-inch chunks)
- ½ cup soy sauce
- ¼ cup white vinegar
- 8 cloves garlic cloves, minced
- 2 tbsp brown sugar
- 3 leaves bay leaves
- 1 tsp black peppercorns

Pat pork dry with paper towels. Season generously with salt and black pepper on all sides.

Heat oil in a large heavy skillet over medium-high until shimmering, about 90 seconds.

Working in batches, sear pork skin-side down 3–4 minutes without moving until skin is golden and crispy.

Flip and sear the other side 2–3 minutes until browned. Transfer to a plate.

Pour off all but 1 tbsp fat. Add garlic and cook 30 seconds until fragrant, then add soy sauce, vinegar, sugar, bay leaves, and peppercorns.

Return pork to the skillet, cover, and simmer on medium-low 8–10 minutes until fork-tender and sauce clings to meat.
