Ingredients

  • 1.5 lbs pork short ribs, 1-inch thick
  • 1 lb potatoes, cubed
  • 1 cup frozen peas
  • 4 cloves garlic cloves, minced
  • 3 tbsp white vinegar
  • ¾ cup water

Instructions

  1. 1

Pat ribs dry and season generously with salt and pepper on both sides.

  2. 2

Heat oil in a large skillet over medium-high until shimmering. Sear ribs 2 minutes per side until browned. Remove and set aside.

  3. 3

Add potatoes and garlic to the same skillet. Stir and cook until garlic is fragrant, about 1 minute.

  4. 4

Pour vinegar and water over potatoes. Return ribs to skillet, cover, and simmer for 10 minutes until ribs are tender.

  5. 5

Stir in peas, cover, and cook 2 minutes until heated through. Taste and adjust salt and pepper.

  6. 6

Serve hot directly from the skillet or plated individually with sauce spooned over top.
