Ingredients
- 1.5 lbs pork shoulder, cut into 1.5-inch chunks
- 2 cups sauerkraut, drained
- 1 medium yellow onion, sliced
- 1 tsp caraway seeds
- 1.5 tsp smoked paprika
- ¾ cup chicken or pork broth

Season pork chunks generously with salt, pepper, and paprika on all sides.

Heat oil in a large skillet over medium-high until shimmering. Sear pork in batches, 2 min per side, until edges turn golden brown.

Remove pork and set aside. Add sliced onion to the same skillet and cook until softened, about 3 minutes.
