Ingredients
- 1.5 lb biała kiełbasa (white Polish sausage), whole or halved lengthwise
- 1.5 lb small potatoes (Yukon Gold or waxy), halved
- 2 cups sauerkraut, drained
- ½ tsp caraway seeds
- 2 tbsp whole-grain mustard
- 2 tbsp neutral cooking oil

Heat oil in a large skillet over medium-high. Add potatoes, cut-side down, and don't move them for 4 minutes until golden.

Stir potatoes, add sausage, and cook 8–10 minutes until potatoes are tender and sausage is browned on all sides.

Push sausage and potatoes to the skillet edge. Add sauerkraut and caraway to the center, stir to warm through, about 2 minutes.

Divide skillet contents among plates. Dollop whole-grain mustard on the side and serve hot.
