Ingredients
- ¾ lb Leberkäse (German meatloaf), sliced 1/2-inch thick
- 4 whole Eggs
- 1 bag (about 20 oz) Frozen french fries
- 3 tbsp Whole grain mustard
- 2 cups Mixed salad greens
- 2 tbsp Neutral cooking oil

Cook fries in the oven or air fryer according to package directions until golden.

Heat oil in a large skillet over medium-high. Once shimmering, add leberkäse slices.

Fry until edges are deep golden brown and crispy, about 3 minutes per side. Transfer to a plate.

Crack eggs into the same skillet and fry until whites set but yolks still jiggle, 3–4 minutes.
