Ingredients

  • 2 6-oz fillets salmon fillets, skin-on
  • ½ cup crushed pistachios
  • ¼ cup panko breadcrumbs
  • ¼ cup parmesan, grated
  • 8 oz green beans, trimmed
  • 1 pinch salt and pepper
  • 3 tbsp olive oil

Instructions

    Mix crushed pistachios, panko, and parmesan in a shallow bowl with a pinch of salt.

    Pat salmon dry, season with salt and pepper, then press flesh-side into the pistachio crust.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until shimmering, ~90 seconds.

    Sear salmon crust-side down without moving until golden and crisp, 4 minutes.

    Flip salmon, reduce heat to medium, and cook until center flakes, ~3 minutes longer.
