Ingredients

  • 3 cups cooked jasmine rice (day-old, chilled)
  • 1.5 cups fresh pineapple, cut into 0.5-inch chunks
  • 1 whole English cucumber
  • 2 tbsp fish sauce
  • 1 whole lime
  • 2 tbsp neutral oil

Instructions

    Slice cucumber into thin rounds and set aside on a serving plate.

    Heat oil in a large skillet over medium-high heat until it shimmers, about 1 minute.
