Ingredients
- 1 lb beef stew meat
- 2 cups long-grain rice
- 1 cup frozen peas
- 1 large carrot
- 1 medium zucchini
- 1 medium onion
- 2 tbsp pilau masala
- 4 cups beef broth

Heat 2 tbsp oil in a large pot over medium-high. Add 1 chopped onion and 1 lb beef stew meat; cook until beef is browned on all sides, about 8 minutes.

Stir in 2 tbsp pilau masala and 1 diced carrot; cook for 2 minutes until fragrant.

Add 2 cups rice and 4 cups beef broth; bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Stir in 1 cup frozen peas and 1 diced zucchini; cover and cook until rice is tender and liquid is absorbed, about 10 minutes more.
