Ingredients
- ½ lb ground beef
- 6 cups beef broth
- 2 tbsp fish sauce
- 8 oz fresh rice noodles (banh pho)
- 1 cup bean sprouts
- ¾ cup fresh herbs (Thai basil, cilantro, mint)
- 1 whole lime
- 2 whole jalapeño peppers, sliced

Form ground beef into 12–16 small meatballs (about 1 inch each). Season generously with salt and pepper.

Bring beef broth to a boil in a large pot over high heat. Add fish sauce and stir to combine.

Gently drop meatballs into boiling broth. Simmer until they float and cook through, about 8 minutes.
