Ingredients

  • ½ lb ground beef
  • 6 cups beef broth
  • 2 tbsp fish sauce
  • 8 oz fresh rice noodles (banh pho)
  • 1 cup bean sprouts
  • ¾ cup fresh herbs (Thai basil, cilantro, mint)
  • 1 whole lime
  • 2 whole jalapeño peppers, sliced

Instructions

    Form ground beef into 12–16 small meatballs (about 1 inch each). Season generously with salt and pepper.

    Bring beef broth to a boil in a large pot over high heat. Add fish sauce and stir to combine.

    Gently drop meatballs into boiling broth. Simmer until they float and cook through, about 8 minutes.

    Divide rice noodles between two bowls. Ladle hot broth and meatballs over noodles.

    Top with bean sprouts, fresh herbs, and jalapeño slices. Serve with lime wedges on the side.
