Ingredients
- 2 lbs beef chuck, cut into 1.5-inch chunks
- 1 large onion, halved
- 2 tbsp fish sauce
- 3 whole star anise pods
- 1 whole cinnamon stick, halved
- 4 cups beef broth
- 1 pinch salt and pepper to taste

Heat a heavy pot or Dutch oven over medium-high. Working in batches, sear beef without moving until dark brown on two sides, ~3 minutes per batch.

Remove beef and set aside. Char onion halves cut-side down in the same pot until blackened, ~4 minutes per side.

Return beef to pot. Add fish sauce, star anise, cinnamon, and broth. Bring to a boil, then reduce heat to low.

Cover and simmer until beef is fall-apart tender, about 75–90 minutes. Stir occasionally.

Discard cinnamon stick, star anise, and charred onion. Season with salt and pepper.
