Ingredients
- ½ lb beef sirloin or strip steak
- 3 tbsp pho broth paste or instant pho base
- 4 cups water
- 4 oz rice noodles (dried, thin)
- 1 whole fresh lime (halved)
- ½ cup fresh mint, cilantro, and green onion (mixed herbs, chopped)

Bring water to a boil in a large pot. Slice the beef very thin against the grain.

Stir the pho paste into boiling water until dissolved, about 1 minute.

Add rice noodles and simmer until tender, about 4–5 minutes. Taste and adjust with salt.

Slide the beef slices into the hot broth off heat. Let them sit for 30 seconds until just cooked through.
