Ingredients

  • 4 slices bread, sliced
  • 4 slices cheese (cheddar, gruyère, or fontina), sliced
  • 3 tablespoons pesto (store-bought or fresh)
  • 2 tablespoons butter, softened
  • 1 pinch salt and pepper to taste

Instructions

    Spread 0.5 tablespoon butter on one side of each bread slice.

    Place a bread slice butter-side down in a skillet over medium heat.

    Spread 1.5 tablespoons pesto on the unbuttered side of the bread in the pan.

    Layer 2 cheese slices over the pesto.

    Top with a second bread slice, butter-side up.

    Cook until golden brown and crispy, ~3–4 minutes. Do not move.

    Flip carefully and cook the other side until golden and cheese melts, ~2–3 minutes.

    Transfer to a cutting board. Repeat with remaining bread, pesto, and cheese.

    Serve hot.
