Crispy Caprese Panini

Ingredients

  • 1 loaf (8 oz) bread (ciabatta or focaccia)
  • 8 oz fresh mozzarella
  • 2 medium tomato
  • ¼ cup pesto

Instructions

    Slice the bread in half lengthwise and spread pesto on both cut sides.

    Layer mozzarella slices and tomato slices on the bottom half, then press the top half down.

    Heat a skillet over medium-high until shimmering, then place the sandwich inside.

    Press down with a spatula for 2–3 minutes until the bottom is golden and crispy.

    Flip and press the other side for 2–3 minutes until golden and the cheese melts.

    Transfer to a cutting board, slice diagonally, and serve hot.
