Ingredients

  • 1.25 lb boneless, skinless chicken thighs
  • ¼ cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 whole lime
  • 3 whole garlic cloves, minced
  • 1 tbsp chili oil

Instructions

    Arrange chicken thighs on a sheet pan, spacing them 2 inches apart. Pat dry with paper towels.

    Whisk peanut butter, soy sauce, 2 tbsp water, minced garlic, and juice from half the lime in a bowl until smooth.

    Brush peanut glaze evenly over chicken thighs, coating both sides. Season with salt and black pepper.

    Broil 6 inches from heat for 12–14 minutes until internal temp hits 165°F and edges are golden-brown.

    Remove from oven. Drizzle chili oil over chicken and squeeze remaining lime wedge over the top.
