Ingredients

  • 12 oz egg noodles
  • ½ cup smooth peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 whole garlic clove, minced
  • 4 whole scallions, sliced thin (green and white parts divided)

Instructions

    Boil salted water in a large pot. Add noodles and cook until tender, about 7 minutes, stirring once.

    Reserve 1 cup of pasta cooking water, then drain the noodles.

    Whisk peanut butter, soy sauce, rice vinegar, sesame oil, and minced garlic in a large bowl.

    Add 0.75 cup of reserved pasta water to the sauce and whisk until smooth. Add more water if needed for pourable consistency.

    Add drained noodles to the sauce and toss until fully coated, about 1 minute.
