Ingredients

  • 8 oz rice noodles (bihon), 8 oz
  • ½ lb large shrimp, peeled and deveined
  • 1.5 cups rotisserie chicken, shredded
  • 2 medium carrots, julienned
  • 3 cups cabbage, sliced thin
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 3 tbsp neutral oil

Instructions

    Soak rice noodles in hot water for 5 minutes until softened, then drain well.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add shrimp and cook, stirring, until pink, about 3 minutes. Push to the side.

    Add garlic to the cleared space, stir for 30 seconds until fragrant.

    Toss in carrots and cabbage, stir-fry 2 minutes until vegetables soften slightly.

    Add noodles, shredded chicken, and soy sauce. Toss everything for 1 minute until heated through and coated.
