Ingredients

  • 1 lb boneless, skinless chicken breast
  • 3 cups broccoli florets
  • 1 whole red bell pepper
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, minced
  • 1 tbsp rice vinegar

Instructions

    Slice chicken into 1-inch bite-sized pieces. Chop bell pepper into 1-inch squares.

    Stir soy sauce, ginger, rice vinegar, and 2 tbsp water in a small bowl.

    Heat 1 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add chicken, stirring constantly, until golden and cooked through, about 6 minutes.

    Toss in broccoli and bell pepper, stir for 3 minutes until broccoli edges char slightly.
