Crispy Pancit Bihon

Ingredients

  • 8 oz rice noodles (bihon), dried
  • 1.5 cups rotisserie chicken, shredded
  • 6 oz shrimp, peeled and deveined
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 medium carrots, julienned
  • 3 stalks scallions, cut into 1-inch pieces

Instructions

    Soak rice noodles in hot water for 5 minutes until pliable. Drain and set aside.

    Heat 2 tbsp oil in a large skillet over medium-high heat until shimmering, about 60 seconds.

    Add shrimp and cook until pink, stirring often, about 2 minutes. Remove to a plate.

    Add garlic to the same skillet, stir until fragrant, 30 seconds. Add carrots and cook for 1 minute.

    Pour in noodles, soy sauce, and 1/4 cup water. Toss constantly until noodles are tender and liquid is absorbed, 3–4 minutes.

    Return shrimp to skillet with chicken and scallions. Toss until heated through, 1 minute. Serve hot.
